Cool Ideas to Design Your Meal

Curry (e.g., Channa Masala) is a spicy dish with gravy that enhances the texture of the main ingredient (e.g., garbanzo beans). Sabji (e.g., Aloo Gobi) is a dry dish of vegetables and the spices are subtle to enhance the unique flavor of the vegetable. Traditional Indian meals have parings of curry, sabji, rice and/or bread, with sides of salad and yogurt. For bread there are many choices, e.g., naan or tortilla. Here are a few meal suggestions.

QUICK MEAL

One curry, and rice or bread is a fulfilling quick meal. Channa Masala, Rajma or Panner/Tofu curry are good example selections. Cook time for this meal is about 30 minutes. 

Another option is sabji, tortilla and plain yogurt.

    EVERYDAY MEAL

    One curry, one sabji, and rice and/or tortilla is a meal that is very tasty and nourishing. See some suggested pairings in the next section. Optionally add a simple salad (e.g., diced cucumber or tomato) and plain yogurt as sides. Cooking time for this meal is 45 minutes.

    MEAL PREP

    Menus for typical or everyday meals are very well suited to be meal prep menus too. Curry and sabji absorb the spices with time and are tastier.

    FORMAL MEAL

    The main meal can be one sabji, two curries (or two sabjis, one curry) rice, bread (naan, tortilla or roti), plain yogurt and salad greens (even sliced cucumbers or diced tomatoes). Paneer/tofu curry add unique flavors. Select appetizers that do not require much preparation. Wine selection can be white or red. The example above has matar paneer curry, saag paneer curry, gobi sabji, plain yogurt, roti. Western desserts or ice cream with nuts/mango are good choices.

    TORTILLA ROLL

     

    Tortilla rolls stuffed with sabji are great food on the go, e.g., on flights. Our favorite sabji for rolls are gobi aloo or green beans aloo.
